Walks near Te Anau or Glenorchy (or elsewhere)

Hi, I'm a french male (sorry for my english...), and I plan to do some walks near Ta Anau, Glenorchy, and maybe near Nelson, (or elsewhere, I've not planned my trip precisely) , during mid-Jan/first week of Feb. Initialy, I'd planned to do Milford and Routeburn Tracks. But without booking, It will be hard (but not impossible...). Maybe Dusky, Heaphy, Hollyford, Rees/Dart Rivers,...I don't know exactly, but I'm open to any proposal. I just want freedom and nature... I'm a good walker (I climb, too...), and I'm not frightened to do hard walks, in hard conditions, to camp into hostile nature...but I like quiet walks too !
