Where to set up camp?

I'm planning a 2 week tramping trip, either in kaniwhaniwha or along the heaphy track. What I'm confused about is where do you set up camp? like if you're walking the trail but don't want to stay at the huts, rather set up a tent somewhere. Can it just be anywhere? is there a certain length I need to keep from the trail?
on great walks, at least 200m from the trail or in designated campsites that you have to book depending on the walk or the time of year on some of them. on fiordland great walks its 500m, other than that you can camp where you want.
